I usually use NHL 2 or 3.5 natural hydraulic lime when pointing stone. This gives a hydraulic set (more rapid than lime putty) but remains very flexible and moisture permeable. When the mortar has set, but not fully cured, I brush it back with a stiff churn brush. This compacts the mortar and softens the appearance of the pointing.
